Lake Smelt are small, wild-caught fish with a mild flavor and delicate texture that becomes crisp and tender when fried. These smelt are harvested in Estonia, headed, gutted and individually frozen, so they require minimal preparation after thawing.
Each fish measures approximately 2–3 inches, making them ideal for serving whole. Lightly coat them in seasoned flour, cornmeal or breading and fry until golden and crisp. They also work well baked or air-fried. Serve with lemon, tartar sauce or malt vinegar for a classic smelt dinner.
