Similar to the Florida Grouper, the Pacific Grouper is wild-caught and it has a distinctive yet mild taste. It is a "lean" yet moist fish. It has large flakes and a firm texture. This versatile fish can be fried, grilled, broiled, baked or skewered. It is also a good choice for chowders and soups. Even though this is a "lean" fish, it is forgiving and difficult to overcook, (as in drying out).
